BIG VIEW REDUX

Ok, as previously stated... I love Big View. That said, why was getting an egg white omelette with spinach and mushroom and nothing else so difficult?
Omelette #1      Western eggwhite Omelette
Omelette #2      Spinach Mushroom Egg white Omelette with CHEESE

Why 3 times I inquired of my friend and owner Frank?  He said that omelette's are generally
served with cheese.
The dictionary defines an Omelette as follows:
(Cookery) a savoury or sweet dish of beaten eggs cooked in fat
[from French omelette, changed from alumette, from alumelle sword blade, changed by mistaken division from la lemelle, from Latin (see lamella); apparently from the flat shape of the omelette]
Do I now have to specifically say "no cheese?"  
I am already telling the folks at Starbucks no milk, after I told them no room.
Anyway, I still love Big View... with or without the cheese:)
